Goo Goo Giveaway Extravaganza: Company's Comin' Casserole Mix

Sometimes you just need dinner in a jiffy -- something you can throw in a pan without measuring or chopping and know that it will meld into a yummy and satisfying meal.

A few years ago, during the Holiday Market show at our local coliseum, I discovered a family-owned business called Company's Comin' that sells homemade soups, casseroles and dip mixes. A character named Hal was dishing up samples (along with some corny jokes), and I just had to stop.

I've been buying from Company's Comin' ever since. The company, which has been featured on the Food Network and Food Finds, sells some of the yummiest and easiest recipe mixes. Add a few ingredients from your pantry, and you've made a quick and tasty meal.

I'm a big fan of the Little Chickie's Chicken and Dumplin' Soup (you use flour tortillas to make the dumplings -- ingenious!), the Upside Down Jackass Jalapenos (adds a kick to homemade chicken salad) and the King Ranch Chicken Casserole (cheesy, spicy comfort food.) I always keep a few Company's Comin' mixes in my pantry for those nights when I don't want to cook but have to anyway.

As part of the Goo Goo Giveaway Extravaganza, I'm giving you the chance to sample one of my favorite Company's Comin' mixes -- King Ranch Chicken Casserole. The mix comes with all the spices and noodles. To complete the meal, you just add 8 ounces of cream cheese, milk, a can of chicken, a can of Rotel and a sprinkling of grated cheese.


The winner of this giveaway will receive one King Ranch Chicken Casserole Mix, and I'll also throw in the other nonperishable ingredients: a can of Rotel tomatoes and a can of chicken. (You can also use a rotisserie chicken or leftover grilled chicken.)
